These low sugar snacks or small meals are perfect for weaning babies and are packed with vitamin and mineral rich veg. They are also a great source of calcium for growing bones and teeth.
Ingredients
- 1 large courgette, grated
- 1 large carrot, grated
- 4 spring onions, cut finely
- 30g canned or fresh sweetcorn
- 125mg mature cheddar, grated
- 30g smoke Applewood cheese
- 125ml full fat milk
- 100ml plain Greek yoghurt
- 3 tablespoons of vegetable oil
- 2 large eggs
- 250mg wholemeal flour
- 3 tsp baking powder
- 3 heaped tsp mild curry powder
Method:
- Pre-heat the oven to 180C (350F)
- Remove excess water from the courgette & carrot by wrapping in a clean tea-towel and squeezing
- Add veg to a mixing bowl and add the onions & sweetcorn
- Add the cheeses, milk, yoghurt, oil & eggs and stir well
- Mix the flour, baking powder & curry powder together and then add slowly to the wet ingredients, folding gently
- Grease some muffin tins with butter and spoon the mixture equally into the 12 muffin suctions
- Bake for approx 20 mins until a skewer comes out clean and the tops are golden brown
